That same thin binder is why the paint re-wets forever, why it can never be varnished, and why a gouache has to live behind glass. Every mark is a small prediction. In oil, the colour laid down is roughly the colour that stays. In gouache, the painter is mixing for a value that has not appeared yet, and the only way to get good at it is to be wrong a few hundred times. What gouache painting actually is, and why the pigment load decides everything Gouache is pigment, water, and a binder that is usually gum arabic or dextrin, with a white filler such as chalk often added as body. The particles are typically larger than in watercolour, and the pigment-to-binder ratio is higher. That last part is the design decision the whole medium rests on. Watercolour uses enough gum to lock pigment into a thin transparent glaze that light passes through and bounces back off the paper. Gouache uses barely enough gum to hold the particles together, so what dries on the sheet is close to a bed of loose pigment. Light hits that and scatters in every direction rather than travelling into a film and back out. The result is the flattest, most absolutely matte surface available in painting, which is exactly why designers, illustrators, and the Persian and Mughal miniaturists used it. A gouache does not glow. It sits. Gouache is barely enough binder to hold the pigment down, and that is not a shortcoming. It is the point. The bench consequences follow directly. It can be laid light over dark, so the working order is free rather than the reserve-the-whites discipline of watercolour. It re-wets indefinitely, so an edge dried yesterday can be softened today, which is a gift when correcting and a hazard when working alongside a passage that has to stay put. And it cracks if it goes on thick. There is no elastic film to flex, so an impasto load of gouache will craze and lift the moment the support moves.
